Local dish a treat for hummus lovers

Peanut Curry Hummus

Ingredients
1 clove garlic (about 1 tsp)
1 can chickpeas (garbanzo beans), rinsed and drained
1 lemon, juiced
1 tablespoon curry powder
1 teaspoon black pepper (coarse grind)
1/4 teaspoon red pepper flakes
1/2 cup peanut butter
Fresh cilantro and olive oil (optional)

Mince garlic in processor, then add chickpeas and run machine until they are mealy (like bread crumbs). Add remaining ingredients and let machine run until it starts to ball up. Slowly with machine running, add water until it reaches desired smoothness (up to 1/2 cup water). Add cilantro and pulse machine to chop and combine.

Serve as a dip or sandwich (with cucumber, carrot, lettuce and bell pepper).

Great for new cooks - you can play with spices, the amount of peanut butter and lemon juice. You can't mess this one up!
