Coffee shop brings tradition to Prince

Red Eye Coffee, located in The Bottleworks across from Quiznos, offers customers a variety of coffee products from traditional espressos to specialty lattes. The shop features Counter Culture Coffee, fresh and organic coffee that is roasted under specific time, temperature, and water constraints and comes straight from the grower. The coffee is brewed a single cup at a time and served in ceramic mugs.
"I'm trying to not do the drive-thru thing where you're five minutes late for work when you stop by," said Gregg Carey, the owner of Red Eye Coffee. "I'm trying to bring the work that the farmers and baristas brought. That's something that I feel has kind of gotten lost recently."
Carey emphasized the importance of providing customers with a relaxing atmosphere where they can feel at home and feel comfortable to talk freely with others.
"I really tried to make it really classy but comfortable at the same time, and I really think I struck a balance here," Carey said.
Carey said he is happy with the way the business turned out and is aiming for a specialty shop with a lot of character.
"I wanted a name that was kind of cool and maybe not immediately recognizable as a coffee shop," Carey said.
Tim Rice, leasing manager for Prince Avenue Investors, said he is trying to revamp the office space in The Bottleworks - the bottling building used by Coca Cola in the early 1900s - and Red Eye Coffee was the perfect addition to the site.
The new coffee shop uses some unique methods for brewing coffee and is perfect for bringing dynamic interest into the area, Rice said.
Red Eye Coffee also sells gelato, an Italian ice cream, in six flavors including chocolate, pistachio, and fruit. Red Eye Coffee is open from 7 a.m. to 10 p.m. daily.
